Chai Spiced Sugar Cookies
Started my day off right with these Chai Spiced Sugar Cookies! Soo yummy and though I didn't have time, they would be a great fall twist on traditional royal icing cookies!
Yes, I know i’ve been gone for an age but that’s life isn’t it? I’m doing my best to pump out some new recipes so hopefully I’ll back a little sooner!

Chai Spiced Sugar Cookies
Yield: About 1 dozen Cookies
250g Whole Wheat Pastry Flour (can sub AP)
50g Granulated Sugar
100g Brown Sugar
1.5 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
3 Teabags of your favorite Chai (finely ground)
½ tsp Vanilla Extract
3T Aquafaba (did not reduce)
113g Vegan Butter
Instructions
Preheat oven to 350F/175C. Line a cookie sheet with parchment or a silicon mat.
Measure and weigh all the ingredients and set aside.
In a large bowl, cream together butter and both sugar until combined. A stand mixer can also be used for faster results.
Add your aquafaba and vanilla. Mix well.
Sift together all dry ingredients and in three parts, add them to the wet ingredients making sure to fully incorporate each time.
Once all the dry ingredients are added, mix just until a dough is formed and begins pulling away from the edge of your bowl. Be mindful not to over mix!
Scoop and shape round balls of dough roughly 1-2 tablespoons in size OR roll out dough on a clean lightly floured surface and cut out with cutters. No need to chill!
Bake for 15 minutes or until lightly golden.
Cool in the pan for 10 minutes before placing cookies on a wire rack to cool completely.
Cream Cheese Icing
Yield: A scant 1/4 Cup Icing
Ingredients for Cream Cheese Icing
2 T Vegan Butter
1 T Vegan Cream Cheese Spread (I used Tofutti)
10 T Powdered Sugar
1/4 tsp Vanilla Extract
Instructions
Combine all ingredients in a large mixing bowl.
With an electric mixer, beat ingredients on medium-low speed until completely combined and fluffy. Or beat by hand with a sturdy whisk.
I’ve got a light touch with cookie icing, so this was enough for me! Both recipes can be easily doubled, tripled etc to suit your sweet needs.
